1. Potato Bacon Soup
Now this is a pretty basic recipe that you can spice up and make your own but this is my favorite way to make potato bacon soup.
Ingredients:
- Yellow Potatoes
- Thick Cut Bacon
- Heavy Cream
- Cheddar Jack Cheese
- Yellow Onion
- Butter
- Flour-I used a gluten free substitute
- Seasonings
- Sour Cream
Steps:
I use a Dutch oven and cook the bacon in the bottom of the pot. Once bacon is cooked remove the bacon but leave the grease in the pan. Add Heavy Cream, Cheddar Jack Cheese, Yellow Onion-cut up, and butter. Let these simmer and stir until you have a nice creamy base. Slowly add the flour and seasonings until it starts to thicken and then add potatoes. Let the potatoes cook until they are easily pierced with a fork. I add in half of the bacon and let it simmer for 15 minutes. Serve with bacon on top, sour cream and more cheese.
